It may at appear, at least on the surface, that winter and plants don’t go together. Fact is, millions of years of evolution have made plants the virtuosos of cold weather. Prior to the deep freeze plants employ a number of tactics to keep their tender parts safe, including accumulating solutes in their tissues, manufacturing their own kind of anti-freeze, and bulking up the amount of lipids in their membranes (aka putting on some weight to stay warm!).
